Jerk Marinade

5 Green onions

5 Fresh thyme

2 teaspoons of Salt

1/2 teaspoon of Black Pepper

2 teaspoons of Ground all spice

1 tablespoon of Brown Sugar

1 teaspoon of Cinnamon

2 Habanero peppers

⅓ cup of Soy Sauce

2 tablespoons of Vegetable Oil

1 chopped onion

1/2 cup of Orange juice

1 teaspoon of Ginger (grated)



Rough chop the scallions, peppers, garlic, onion and thyme and place in the food processor to make it a purée. Now add all the other ingredients and pulse to start. The run the purée speed for 2-3 minutes until everything breaks down to a smooth consistency



If using dried thyme, use 1/2 tablespoon. This makes about 3 cups of marinade and it can be stored in the fridge for 1 month. Basically, all you’ll be doing is making a purée with the all the ingredients mentioned above. So, you’ll need a blender or food processor.
