Jerk Chicken With Rice And Peas


Jerk Chicken


| Servings 2 | Prep time 10 min | Cook time 30 min | + Marinating time |


Ingredients 

– 1 pound Of Chicken Breast [or what ever you have]

–  1 Cup’s Rice

– 14  fluid ounces of Light coconut milk

– 1/4 cup of Water

– 1/2 teaspoon of Ground all spice

– 1/2 teaspoon of Salt

   Fresh ground pepper

– 3 Fresh thyme sprigs

– 1 Garlic Clove (crushed)

–  15 fluid ounces of Red kidney beans (rinsed; drained)

Directions

Let Chicken marinate for 12 – 24 hour’s

Turn oven on to 350 F place chicken in oven safe bowl,

Put together everything for the the rice and Peas let simmer then turn down to low and cover for half and hour.

Place Chicken in oven for 30 minutes should be cooked all the way when its time to come out
